(The occasional) Daily Update...

Last night turned out to be excellent! After work, I rushed to Jsix downtown for my aunt’s 60th birthday dinner… had valet take my car and ran inside to find that Jeff, the GM of the restaurant had read my facebook status update stating my intense craving for mac n cheese and had a bowl of some deliciousness ready and waiting for me when I arrived! Talk about service… I finished that, and ordered a filet with balsamic reduction soaked portabella mushroom and mashed potatoes. Needless to say, it was absolutely delicious. For dessert my aunt whipped out the Red Velvet “Nothing bundt” cake! SO GOOD. Probably the best I’ve ever had.

After dinner, I drove up to PQ to hang out with Bobby, George, Sophinie, Mark and Derek… since Sophinie had just flown in from SF yesterday. We watched some strange movie about serial killers in honolulu, and then Bobby offered to take us up to San Marcos to go to a bar called Churchill’s. It was a pretty cool spot! They had about 50 different beers on tap, all delicious, and Bobz opened a tab for us… Sophinie and I only had about 2 beers each but, damn, we were buuzzzziinn! Hahahaha

All in all, a very successful night. Today I’ll be having lunch with s’more of my favorite people, Sophinie (if she’s awake, since her sleeping pattern is way off and was still up when I finally got up for work this morning) Julie, Lori and possibly Lorena! YAY! Today should be grand! Oh yeah, and I might be going to PB tonight to hang out with Ben (mata, not my ex) since I haven’t seen him in a few months. Should be a great hump day! HAPPY HUMP DAY EVERYONE!

Good Talk.... *fistbump

My sister and I had a really insightful conversation today over lunch. I love those moments where both of us are in the right mood to really discuss our lives and ourselves… our main topic of conversation happened to circle around our dad. *Sigh… there is so much to be said about this subject. I don’t even know where to begin, but I’ll try.

Over the last 2 or 3 years I’ve battled in my mind whether or not to reach out to him. One side tells me not to, because well, I’ve tried it several times in the past, and one of two things happen: 1. he would apologize (insincerely) and then later we would discover that he kept doing what he was doing or 2. he would reject us (and/or disown us) altogether (yes both of these outcomes happened on multiple occasions, I lost count, but close to 6 or 7 times)…

The other part of me argues that he is an old stubborn man set in his ways, well into his 60’s and the truth is he’s never going to change… which means to me, that the only resolution to this situation is acceptance. The bottom line is that my gut has been right all along, and I need to resolve this if I’m ever going to really be able to move on from it.

My dad is a moral mess. He has no sense of the consequences that come with his actions and choices. He’s just plain ignorant. In the grand scheme of things he hasn’t done anything appalling… yes he’s selfish, childish, delusional, but he’s only human, and as so many of us have, he’s made poor choices. But it’s the fact that he repeated these mistakes over and over that hurt us the most. I mean, it really wore on our trust.

As a result, I have trust issues. Don’t get me wrong, the “i blame my daddy” phase is fading off, I’m really trying to take responsibility for my feelings and actions, but I have to admit, growing up with a man as conniving, deceiving and prone to lying as he is, I have serious issues opening up and trusting the opposite sex… or just people in general.

It pains me to say it, but my dad personifies all of the qualities in humans that I dislike. So what am I to do? Go on with my life ignoring this huge gaping hole in my being? Growing up, I never got to see a proper, healthy relationship between a man and woman who loved each other. Instead, the only example of a marriage I had was this retardedly dysfunctional, extremely emotionally abusive relationship that was my parent’s.

My biggest concern to this day, is am I doomed to this kind of relationship? Or will my coming to a resolution with my dad help me to move forward and toward a healthy, loving, functional relationship one day? Help. Possibly more on this later. I’m at work. Gah.

“Actually, this isn’t just one photograph — it’s a composite of 31 different images, taken in the shadow of the solar eclipse that passed over Asia and parts of the Pacific back in July for 6 minutes and 39 seconds. That’s the longest solar eclipse anyone on Earth will witness this century; a longer one isn’t coming until 2132. Mathematician and eclipse photographer Miloslav Druckmüller didn’t waste a second of it, positioned with a team of colleagues on Enewetak Atoll in the South Pacific, which just happens to be where the first hydrogen bomb was tested by the United States back in 1952. (Sounds like the setup to an un-aired episode of Lost, but anyway.) The photo shows the solar corona that make up the sun’s “atmosphere” in glorious detail. Its whorls and loops extend millions of miles into space, are nearly 200 times hotter than the visible surface of the sun, and yet aren’t nearly as bright (by a factor of something like a million), hence, we can only see them during eclipses. I love the delicate beauty of this photo, and how it makes various features of the corona so plainly visible, like the difference in activity around its polar regions, as well as the dim, cratered surface of the moon. Ain’t the universe purdy?”

Chicken Curry Fried Rice, Alli style!

Mmmm… Honestly, I have no idea what the measurements were for each of the ingredients… but I need to write down somewhere what they are so that I don’t forget… I have to say I’m pretty damn proud of myself, this was the first time I cooked this dish, and it was a hit! My roomies scarfed it down like it was nothing, and so did my sister and her kids… I didn’t even have anymore leftovers to eat today! But that’s alright cuz it makes me happy that everyone enjoyed it so much…

To serve 6-8 people

2 packages of chicken tenders (uncooked)
cornstarch
turmeric
salt/pepper
onion powder
chili flakes
cayenne pepper
white pepper
bragg’s soy sauce (or regular soy sauce)
white rice
green onion
basil leaves (fresh)
veggie oil
red bell pepper
white onion
can of pineapples

Chop onions and bell peppers into bite size pieces, season with salt, pepper and turmeric and place in a bowl. Chop up green onions and basil leaves, open and drain can of pineapples. Put all chopped ingredients aside, and pull out chicken tenders. Chop into 1x1 inch cubes, season with salt/pepper/turmeric and then coat lightly in cornstarch.

Pour some oil into a large pan and sautee veggies and pineapples. Once they are somewhat soft, add chicken and cook until they are about halfway done. At this point, add rice with extra oil so it doesn’t stick to the pan. Rice should start to yellow from turmeric on other ingredients as you continue to mix. Add basil and green onions, mix well. Add seasonings to taste until satisfied with flavor… and voila! Yumminess! ENJOY…

Also, feel free to add whatever other ingredients you like, my friends suggested raisins and possibly other veggies, like carrots or potatoes… get creative!

Casual dinner date with tennis man.

I went on a date tonight. It was pretty casual, and I was really only going to have some fun. The guy’s cute, he’s a pro tennis guy at a country club out here, pretty young, mid twenties… but all he did during dinner was talk about work and complain! Ugh… what a dud.

I even went as far as saying, “Well, we’re talking a lot about what you don’t like, what DO you like? Movies, food, anything…” He went on for a few minutes listing things and then somehow digressed back into complaining. Finally toward the end I think he figured out that he was boring me and started to ask me some questions about what I want to do in the future, what my passions are, and then, instead of listening to my plans and ambitions, he started instructing me on what I need to do.

WTF? Seriously dude? Hahhaha.. I felt like I was on a date with my ex’s extremely conservative republican white dad. Only he had never had pho. Sad.

That was a failure…. I mean, I kinda went into it knowing he was a little too conservative for me, but I just wanted to have some fun tonight! If I had known the entire date would consist of me listening to him complain about work and dealing with all these ‘ethnic people’ with ‘serious language barriers’ I would have passed on it.

At least I got some free food out of it.
